2 Reasons Why Many in Illinois are Putting Bread in Their Fridge
I'm not one who normally follows trends, but I may reconsider now that I finally understand why many in Illinois are placing bread in their fridge. The truth is there are two reasons.
I want to be clear that I'm not giving medical advice. Yes, I was given the nickname "Doc", but a doctor I am not. The guy on TikTok who was explaining something I've seen many in Illinois do also isn't giving medical advice, but he's learned two interesting things about why placing bread in your fridge can be a very healthy thing (maybe).
The short explanation is many Illinoisans are cleverly putting bread in their fridge because it can absorb moisture and help other food in the fridge last longer.
The 2nd reason I had never heard before this guy dropped his now viral video. If you chill bread in the fridge before eating, he says it becomes a "resistant starch" which makes it much more difficult for your body to absorb calories from. It's too bad the other food in my fridge doesn't behave in the same calorie-resistant way.
The Johns Hopkins Diabetic Center defines resistant starch as "a carbohydrate that resist digestion in the small intestine and ferments in the large intestine". That sounds painful, but like I said, I'm not a real doctor.
It looks like you have potentially 2 good reasons to assign at least some bread to your fridge. This is one case where peer pressure might finally pay off.
