If you have a lifestyle that avoids gluten, but you love pizza, there's some good news for you if you live in Illinois. Two pizza places in the Land of Lincoln have been voted among the top 10 places to get gluten-free pizza in America.

USA Today asked their expert panel to nominate the pizza places in America that they felt made the best gluten-free creations and then they had their national audience vote for those nominees. Out of the thousands of pizza places in America that offer gluten-free pies, 2 of the top 10 are in Illinois:

What makes a great gluten-free pizza?

There's a difficult balance that requires blended flour, binding agents, high hydration and a hotter and longer bake time. I've also seen many claim you need to go light on the toppings otherwise it creates problems for the dough. That also depends on whether you prefer crisp or gooey pizza, too. Back to my original point: it's not easy making great gluten-free pizza and the fact that 2 of the top 10 in America that do it call Chicago home.
