I found it interesting that pizza wasn't really a thing in Missouri until Monte Bello opened in 1950. The St. Louis pizza places, in particular, became famous for their own style utilizing Provel cheese which is either a great or not thing depending on how you feel about Provel cheese. Extremely thin crust also became known as the signature Missouri pizza style. I am a fan of the sweet pizza sauce that some of the St. Louis pizza places nail.
