I saw Restaurant Dive share the news of explosive growth by a chicken salad chain that is very much in vogue right now. What chain has declared itself a chicken salad champion? Chicken Salad Chick which already has a handful of locations in Illinois already like this one in Bloomington.

According to the official website for this chicken salad brand, they also have Edwardsville and East Peoria restaurants, too. But, the new press release shared by the company says they have bigger plans for Illinois than just a handful of locations.

"Chicken Salad Chick is currently prioritizing development in Pennsylvania, Ohio, Minnesota, Iowa, Wisconsin, Michigan, Illinois and West Virginia."

They've gained a reputation for having a wide-variety of chicken salad flavors and variations and also strive for "southern hospitality", too.

It's something completely different for a chain to specialize in and seems to be growing faster than franchisees can keep up with.
